Ingredients

Dry Ingredients:

1 cup almond flour (or oat flour for a nut-free option)

½ cup coconut flour

½ teaspoon baking powder

½ teaspoon baking soda

1 ½ teaspoons turmeric powder

½ teaspoon cinnamon

¼ teaspoon ginger powder

¼ teaspoon cardamom (optional, for a chai-like flavor)

¼ teaspoon black pepper (enhances turmeric absorption)

¼ teaspoon sea salt


Wet Ingredients:

½ cup honey

⅓ cup melted white chocolate

¼ cup melted coconut oil (or butter)

2 large eggs (room temperature)

1 teaspoon vanilla extract

⅓ cup milk of choice (dairy or plant-based)


Optional Add-ins:

¼ cup additional chopped white chocolate (for extra sweetness)

¼ cup chopped nuts (pecans or walnuts)


Instructions

1. Preheat oven to 175°C (350°F). Line an 8x8-inch baking dish with parchment paper.


2. In a large bowl, whisk together almond flour, coconut flour, baking powder, baking soda, turmeric, cinnamon, ginger, cardamom, black pepper, and salt.


3. In a heatproof bowl, gently melt the white chocolate and coconut oil together using a double boiler or microwave in 15-second intervals, stirring between each until smooth.


4. In a separate bowl, whisk together honey, melted white chocolate mixture, eggs, vanilla, and milk until smooth.


5. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in chopped white chocolate or nuts, if using.


6. Pour batter into the lined pan and spread evenly. Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.


7. Let blondies cool in the pan for 10-15 minutes before slicing.
